We made it to cookie Friday, which for the week we’ve been having is no small feat. This week we made three ingredient pumpkin chocolate chip cookies.
Spice cake mix, 15 oz can of pumpkin puree, and a bag of chocolate chips. Mix all together, drop on parchment lined sheet, bake at 350 for 10-15 minutes. I kinda hate how altitude makes my bake times so variable, but ah well. I kept forgetting to set timers today, so I can’t say with any certainty if we had 12 minute cookies or 15 minute cookies. I did check one batch at 10 minutes, and they were too gooey.
Altitude did make for some cool night skies this week. We enjoyed the geomagnetic storm last night. It took a minute for all of our eyes to adjust, and this long exposure photo definitely heightened what was visible to the naked eye, but the sky was definitely maroon in patches last night. So cool.
In other news, Aspen the kitty has decided that she’s writing a novel. Why else would she be putting in so many hours at my desk? In my chair? “Where is Aspen?” is usually one of the first questions a Trent asks upon arriving home from anywhere. The answer as of late, “Oh, she’s upstairs in the ploffice working on her novel.” But I too am writing a novel. Good thing laptops are portable.
