It’s Cookie Friday!

What is Cookie Friday? Once upon a time, before global pandemics rewrote life as we all know it, people like Mr. Trent used to work in offices for the entire work week. And some offices, like Mr. Trent’s, would celebrate the end of said work week by stocking the cafeteria with cookies. Cookie Friday was a highly anticipated weekly event.

When the pandemic happened, and life shifted to work from home, I started making cookies on Friday. To remember. To make Mr. Trent smile. To reclaim a little bit of what was lost. And because any reason is a good reason to make cookies.

Snickerdoodles are one of our favorites. Below is my recipe. My secret is adding the cinnamon directly to the batter, infusing the entire cookie with a uniform kick, rather than rolling the dough in cinnamon and sugar. I often roll snickerdoodles in sprinkles as opposed to just sugar. Rainbow jimmies are incredibly festive and delicious for birthdays.

Snickerdoodles (pronounced “tee-he doodle” by Mr. Trent)

1 and 1/2 cups sugar

1 cup softened butter

2 large eggs

2 and 3/4 cups all purpose flour

2 teaspoons cream of tartar

1 teaspoon baking soda

1/4 teaspoon salt

2 teaspoons ground cinnamon

 

1/4 cup sugar or sprinkles for rolling dough in

 

Heat oven to 400 degrees F. In large bowl cream sugar and butter. Add in eggs and mix until combined. In separate bowl whisk together dry ingredients: flour, cream of tartar, baking soda, salt, and ground cinnamon. Add to sugar, butter, eggs and beat until combined into delicious, perfect cookie dough.

Shape dough into 1 inch to 1 and 1/4 inch balls. I use a cookie scoop and don’t really worry about size. Roll balls in the 1/4 cup of sugar or sprinkles. Place balls 2 inches or so apart on ungreased cookie sheet. Bake for about 9 minutes. Let cool, snap a picture because it will last unlike these beauties. Share, enjoy!
